Bacon Wrapped Aspragus Waffle Fry Bites

Makes 8 to 10 servings
Ingredients
Truffle Aioli | |
½ cup | Mayonnaise |
½ cup | Sour cream |
1 tablespoon | White truffle oil |
1 each | Garlic clove, grated |
1 ½ teaspoons | Lemon zest |
½ teaspoon | Salt |
⅛ teaspoon | Black pepper |
1 package | McCain® Craft Beer Battered Waffle Cut Fries |
1 bunch | Asparagus, trimmed and cut in half |
1 pound | Bacon slices, halved |
4 ounces | Smoked gouda cheese, shredded |
Directions
Preheat oven to 425°F.
To make aioli, mix all ingredients in bowl and stir until well combined.
Bundle 3-5 halved asparagus spears together by wrapping with half slice of bacon. Repeat until all asparagus is bundled and wrapped. Place bundles seam side down on parchment-lined sheet pan.
Bake beer battered waffle cut fries according to package instructions.
Bake bacon wrapped asparagus bundles uncovered for 8 -10 minutes or until bacon is rendered and asparagus is roasted. (If using thick cut bacon time may vary.)
- When waffle cut fries are hot from the oven, top each with 1 tablespoon smoked gouda cheese, bacon wrapped asparagus bundle and a dollop of truffle aioli. Serve warm.
