Bacon Wrapped Aspragus Waffle Fry Bites

|½ cup||Sour cream|
|1 tablespoon||White truffle oil|
|1 each||Garlic clove, grated|
|1 ½ teaspoons||Lemon zest|
|⅛ teaspoon||Black pepper|
|1 package||McCain® Craft Beer Battered Waffle Cut Fries|
|1 bunch||Asparagus, trimmed and cut in half|
|1 pound||Bacon slices, halved|
|4 ounces||Smoked gouda cheese, shredded|
Preheat oven to 425°F.
To make aioli, mix all ingredients in bowl and stir until well combined.
Bundle 3-5 halved asparagus spears together by wrapping with half slice of bacon. Repeat until all asparagus is bundled and wrapped. Place bundles seam side down on parchment-lined sheet pan.
Bake beer battered waffle cut fries according to package instructions.
Bake bacon wrapped asparagus bundles uncovered for 8 -10 minutes or until bacon is rendered and asparagus is roasted. (If using thick cut bacon time may vary.)
- When waffle cut fries are hot from the oven, top each with 1 tablespoon smoked gouda cheese, bacon wrapped asparagus bundle and a dollop of truffle aioli. Serve warm.
