Fish and Sweet Potato “Chips” with Honey-Lime Mayo

​A fresh, flavorful take on classic fish and chips featuring McCain® Seasoned Waffle Fries, fresh cole slaw and a cool, sweet honey-lime mayo.
Makes 4 servings

Ingredients

12 ouncesMcCain® Seasoned Waffle Fries
8 piecesyour favorite frozen fish fillets
8 ounceshoney-lime mayo (recipe follows)
2 cupsprepared cole slaw
 
Honey-Lime Mayo
2 cupsmayonnaise
4 tablespoonshoney
2 tablespoonslime juice
to tastekosher salt
to tasteblack pepper

Mix all ingredients together. Chill until serving.

Directions

Prepare fish and waffle fries according to package directions.
Divide the waffle fries and the fish fillets between four serving plates.
Add a 2-ounce ramekin of honey-lime mayo and ½ cup of coleslaw to each plate.
