Maple-Pecan Glazed Sausage Skewers
Sweet and savory never tasted so good. This dish is fun to assemble and tastes even better.

Maple Pecan Glaze
Shallots, finely chopped
Pecans, finely chopped
Pure maple syrup
Turkey Italian sausage links, cut each into 4 chunks
Red bell pepper, 1 ½" chunk or chop
Red onion, 1 ½" chunk or chop
Butternut squash, ¾" chunk or chop, par boiled
Garlic Sautéed Kale with Sundried Cranberries

Chopped kale, raw
Preheat oven to 425°F.
Arrange potato wedges in single layer on baking sheet to let thaw slightly, about 5 minutes.
To make glaze, add all ingredients in saucepan and simmer 10 minutes.
For each skewer: add 2 chunks sausage, 2 potato wedges, 2 bell pepper, 2 red onion and 2 butternut squash in alternating order. Place skewers on baking sheet and brush with maple pecan glaze. Bake for 20 minutes, turn and brush with glaze halfway through cooking.
To make kale, heat butter in large sauté pan. Add garlic salt and kale and cook for 6-8 minutes. Add cranberries and sauté 2 more minutes.
To assemble: Divide kale mixture among 4 plates, top with 2 skewers and brush again with maple pecan glaze.
