Smart Start Breakfast Burrito
Whole-grain,
10-inch flour tortilla filled with scrambled eggs, low-fat cheese, McCain® Crinkle Fries, diced
red bell peppers and chopped turkey breakfast sausage patties with a side of
salsa.

Ingredients
4 ounces | McCain® Seasoned Crinkle Fries |
4 ounces | turkey sausage patties |
4 whole | eggs, scrambled |
4 whole | 10-inch whole-grain tortillas |
4 tablespoons | small, diced red bell peppers |
4 tablespoons | low-fat cheese, shredded |
8 ounces | prepared salsa |
as needed | vegetable pan spray |
Directions
Prepare turkey sausage patties according to package directions, chop and set aside.
Prepare McCain® Seasoned Crinkle Fries according to package directions.
When potatoes are nearly done, prepare scrambled eggs and diced peppers in a medium, pan-sprayed skillet, cook to desired consistency.
Warm whole-grain flour tortillas for 45 seconds in the microwave for easier folding.
Place one tortilla on serving plate. In the center of the tortilla add 1 ounce oven-baked crinkle cut fries, ¼ of the scrambled eggs with diced red bell pepper, shredded low-fat cheese and ¼ of the chopped turkey breakfast sausage.
Fold bottom of tortilla up, covering the ingredients, then fold in the sides of the tortilla over the initial fold. Roll the tortilla away from you to complete the burrito roll.
Prepare the remaining tortillas in the same way.
Serve each with 2 ounces of prepared salsa.
