Smiles Grilled Cheese Sandwiches with Creamy Tomato and White Bean Soup
You’ll say it’s for the kids but adults are going to love dunking McCain® Smiles® into this hearty soup just as much, if not more than the little ones.
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
2 tsp dried Italian herb blend
1/4 tsp each salt and freshly ground pepper
4 cups sodium-reduced chicken or vegetable broth
1 can (28 oz) diced tomatoes
1 can (19 oz) white beans, drained and rinsed
1/2 cup 10% half and half cream
24 McCain® Smiles®
3/4 cup shredded Cheddar cheese
1/2 cup cooked, crumbled bacon
In Dutch oven or large saucepan, heat oil over medium heat; cook onion, garlic, herbs, salt and pepper for 5 minutes or until softened.
Add broth, tomatoes and beans; bring to boil. Reduce heat and simmer for 15 minutes or until very fragrant. Remove from heat and purée, in batches, using a blender or food processor.
Return soup to saucepan; stir in cream. Cook, stirring often, for 5 to 7 minutes or until heated through (do not allow to boil).
Meanwhile, prepare McCain® Smiles® according to package directions; remove from oven. Top half of the Smiles® with cheese; cap with remaining Smiles®. Return to oven for 3 minutes or until cheese is melted.
Garnish soup with bacon and serve with grilled cheese Smiles® on the side.
