Bacon Wrapped Aspragus Waffle Fry Bites

Makes 8 to 10 servings


​Truffle Aioli
​½ cup
​½ cup
Sour cream
1 tablespoon
White truffle oil
1 each
Garlic clove, grated
1 ½ teaspoons
Lemon zest
½ teaspoon
⅛ teaspoon
Black pepper

1 package
McCain® Craft Beer Battered Waffle Cut Fries
​1 bunch​Asparagus, trimmed and cut in half
​1 pound​Bacon slices, halved
​4 ounces​Smoked gouda cheese, shredded



  1. Preheat oven to 425°F.

  2. To make aioli, mix all ingredients in bowl and stir until well combined.

  3. Bundle 3-5 halved asparagus spears together by wrapping with half slice of bacon. Repeat until all asparagus is bundled and wrapped. Place bundles seam side down on parchment-lined sheet pan.

  4. Bake beer battered waffle cut fries according to package instructions.

  5. Bake bacon wrapped asparagus bundles uncovered for 8 -10 minutes or until bacon is rendered and asparagus is roasted. (If using thick cut bacon time may vary.)

  6. When waffle cut fries are hot from the oven, top each with 1 tablespoon smoked gouda cheese, bacon wrapped asparagus bundle and a dollop of truffle aioli. Serve warm.
