Balsamic Sweet Potato Fries
Bring out all the best flavors of crunchy, crinkle-cut sweet potatoes with a fresh herb oil and balsamic reduction.
Makes 4 servings
Ingredients
1 pound | McCain® Sweet Potato Crinkle Fries |
1 cup | balsamic vinegar |
1/4 cup | herb oil (recipe follows) |
Herb Oil
1 cup | extra-virgin olive oil |
½ tablespoon | fresh rosemary, chopped |
½ tablespoon | fresh thyme, chopped |
½ tablespoon | fresh oregano, chopped |
½ tablespoon | fresh parsley, chopped |
½ pinch | salt |
Directions
Mix oil and herbs together.
Season with salt and let stand for at least 1 hour.
In a small saucepan, bring the vinegar to a boil, then reduce heat to a simmer. Cook until vinegar is reduced to about 2 tablespoons of "syrup."
Meanwhile, prepare fries according to package directions.
Transfer to a serving plate and sprinkle with the balsamic reduction. Toss fries with ¼ cup herb oil.
