Balsamic Sweet Potato Fries

​​​Bring out all the best flavors of crunchy, crinkle-cut sweet potatoes with a fresh herb oil and balsamic reduction.
Makes 4 servings


1 pound McCain® Sweet Potato Crinkle Fries 
1 cup balsamic vinegar
1/4 cup herb oil (recipe follows)

Herb Oil
1 cupextra-virgin olive oil
½ tablespoonfresh rosemary, chopped
½ tablespoonfresh thyme, chopped
½ tablespoonfresh oregano, chopped
½ tablespoonfresh parsley, chopped
½ pinchsalt


Mix oil and herbs together.
Season with salt and let stand for at least 1 hour.
In a small saucepan, bring the vinegar to a boil, then reduce heat to a simmer. Cook until vinegar is reduced to about 2 tablespoons of "syrup."
Meanwhile, prepare fries according to package directions.
Transfer to a serving plate and sprinkle with the balsamic reduction. Toss fries with ¼ cup herb oil.
